Cassava Suman in Banana Leaves

Last week, we made cassava suman that we wrapped in banana leaves. You can also do them in aluminum foil, but banana leaves give them a good taste. The leaves need to be wiped cleaned.

All we needed to mix in a bowl are:
1-16 oz. frozen grated cassava, thawed
1 cup shredded coconut
1/2- 3/4 cup sugar

After mixing the ingredients, roll the mixture in the cut banana leaves and fold the two sides to wrap, kinda like making spring rolls. Place the side with the folds down to keep them in place. Steam for 1 hour.

The final product was so delicious!

KST Sandwich

This is my new favorite sandwich- loaded with my favorite veggies: kale, sprouts and tomatoes. Yum! Looking at the picture makes me hungry again.
My mom and I just got into sprouting and I like the sprouts much better than the ones she used to get at the store.

Festival of Nations

I volunteered at the Festival of Nations Filipino food booth last Thursday. It was a lot of fun! I helped sell a lot of bubble teas. When my family came to pick me up we walked around and tried different foods. The banana spring roll was my favorite.

making bagel (fake) dogs

Here I am helping Mama make bagel "dogs." They turned out really well. We also made bagels and it was interesting. I've never seen anybody make them before. It was quite a work!
Mama, when do we get to make bagel dogs again?
